W artykule przedstawiono wyniki badań dotyczące zmian zawartości błonnika pokarmowego i jego frakcji w marchwi i ziemniakach pod wpływem obróbki cieplnej, tj. gotowania w wodzie i parze oraz pieczenia. Na podstawie uzyskanych wyników stwierdzono, że analizowane warzywa charakteryzowały się dużym zróżnicowaniem pod względem zawartości błonnika pokarmowego i poszczególnych frakcji. This article presents the results of research on changes in the content of dietary fiber and its fractions in carrots and potatoes under the influence of heat treatment, such as boiling, steaming and baking. On the basis of these results, it was found that the vegetables selected for the study were characterized by high diversification of dietary fiber and the fractions, and the change in dietary fiber under the influence of heat treatment.
