Etap pobierania i przygotowania próbek do badań żywności ma znaczący wpływ na jakość badań mikrobiologicznych. W artykule omówione zostały zagadnienia związane z wyborem metody pobierania próbki w zależności od rodzaju matrycy żywności oraz określeniem planu pobierania próbek. Przedstawiono również dokumenty opisujące postępowanie z próbką laboratoryjną i analityczną.

The stage of sampling and preparation of samples for food examination has a significant impact on the quality of microbiological analysis. The paper discusses issues relating to the choice of sampling method depending on the type of food matrix and specifying the sampling plan. Documents describing the laboratory and analytical sample were also presented.
