Realizacja celów zrównoważonej gospodarki wymaga od producentów żywności analizy wskaźników środowiskowych. W artykule przedstawiono badania śladu węglowego w produkcji i przetwórstwie mięsa w średniej wielkości zakładzie w Polsce. Prace obejmowały ocenę emisji gazów cieplarnianych w zdefiniowanym zakresie i uwzględniały, zarówno emisje bezpośrednie (wynikające ze spalania paliw kopalnych i działania systemów produkcyjnych), jak i pośrednie (związane z zużyciem energii elektrycznej). Na podstawie zgromadzonych danych opracowano jednolitą metodologię obliczania śladu węglowego, umożliwiającą precyzyjną ocenę emisji na każdym etapie produkcji. Opracowano bazę danych, co pozwoliło na określenie wartości śladu węglowego w analizowanym okresie. Wyniki badań dostarczają kluczowych informacji umożliwiających optymalizację procesów produkcyjnych oraz opracowanie strategii dekarbonizacji przetwórstwa mięsnego.

The achievement of sustainable economy goals requires food producers to analyze environmental indicators. A study of the carbon footprint of meat production and processing at a medium-sized facility in Poland was presented. The work included an assessment of greenhouse gas emissions within a defined range and took into account, both direct emissions (resulting from the combustion of fossil fuels and the operation of production systems) and indirect emissions (related to electricity consumption). Based on the collected data, a unified methodology for carbon footprint calculating was developed, allowing precise assessment of emissions at each stage of production. A database was developed, which made it possible to determine the carbon footprint value over the analyzed period. The results of the study provide key information to optimize production processes and develop strategies for decarbonizing meat processing.
Analiza śladu węglowego produkcji wyrobów mleczarskich pozwala na ocenę wpływu tej branży na środowisko i wskazanie obszarów wymagających optymalizacji. Celem badania było określenie emisji gazów cieplarnianych (GHG) w procesie produkcji mleka i jego przetworów w polskim zakładzie przemysłowym. Dokonano analizy produkcji, wyznaczono kluczowe parametry procesów oraz zastosowano odpowiednią metodę zbierania danych. Stwierdzono, że każdy proces produkcji ma swój udział w całkowitym śladzie węglowym (CF). CF produkcji nabiału wynosił 0,37 kg CO2eq/kg. Główne źródło emisji GHG stanowiło zużycie gazu ziemnego i energii elektrycznej, a każde z nich odpowiadało za około 40% całkowitych emisji. Monitorowanie i redukcja śladu węglowego to istotny krok w kierunku zrównoważonego rozwoju sektora mleczarskiego oraz dostosowania do międzynarodowych regulacji środowiskowych.

Analysis of the carbon footprint of dairy product manufacturing allows for an assessment of the industry’s impact on the environment and identification of areas requiring optimization. The aim of the study was to determine greenhouse gas (GHG) emissions in the production of milk and dairy products in a Polish industrial plant. Production was analyzed, key process parameters were determined, and an appropriate data collection method was used. It was found that each production process contributes to the total carbon footprint (CF). The CF of dairy production was 0.37 kg CO2eq/kg. The main source of GHG emissions was the consumption of natural gas and electricity, each of which accounted for approximately 40% of total emissions. Monitoring and reducing the carbon footprint is an important step towards the sustainable development of the dairy sector and adaptation to international environmental regulations.
Improvement of life quality, food production and sustainability requires search for better, efficient natural resources extracting methods, while minimizing environmental impact, which is determined by carbon and water footprint calculation. In order to counter global phenomena, it is necessary for food-producing chain to work together to take conscious action on environment. Restoring balance demands action to reduce greenhouse gas emissions and rational water use, by reducing energy intensive processes or increasing efficiency of wastewater treatment methods. This requires a thorough understanding of all phenomena that determine a given process. Viscous fingering occurs during such processes as enhanced oil recovery, metal crystallization in batteries, sugar refining, groundwater purification and many others. Research to improve knowledge of this phenomenon and ability to predict its effects is crucial in development of basic industrial processes. This paper presents an experimental study of tracking immiscible viscous fingering in modified Hele-Shaw cells filled with a granular bed of known parameters. The influence of bed parameters and flow conditions on the observed phenomenon was investigated. During the tests, beds with the following grain diameter ranges were used: 200–300, 300–400 and 400–600 μm; the liquid was injected at three different flow rates in the range of 100–400 ml/h. On the basis of carried out work, a model of the studied phenomenon was proposed, which made it possible to determine the extent and the fingering scale.
The importance of microfluidics research is growing, especially in the fields of chemistry, biology or medicine. This is coupled with a growing demand for specialized capillary equipment that allows advanced research at the microscale. Conventional methods of manufacturing such devices are expensive, time-consuming and do not guarantee good results. An alternative to these methods is the use of 3D printing technology. Despite the existence of numerous works presenting the possibilities of 3D printing in the context of creating microfluidic devices, there is a lack of comprehensive works presenting qualitative analysis of printed objects. This paper presents a method of producing microcapillary structures for microfluidics research with the help of 3D printing using stereolithography technology. The quality requirements that the printed objects should meet are defined and all stages of production are characterized. A qualitative analysis of the obtained objects was carried out, taking into account both the influence of individual printing parameters and print processing methods. The results of microfluidic tests using printed objects are also presented. This work is aimed at providing specific knowledge that allows the manufacture of precision devices for microfluidics purposes at low cost.
Wyzwaniami przemysłu spożywczego są: obniżenie zużycia energii i materiałów oraz minimalizacja wpływu na środowisko. W.artykule przedstawiono zagadnienia dotyczące śladu węglowego (CF) opakowań do żywności. Scharakteryzowano rodzaje opakowań, ich wpływ na zmiany klimatyczne oraz kierunki zmniejszenia śladu środowiskowego. Poruszone zostały również kwestie wymogów prawnych, dotyczące śladu węglowego, jakim podlegają producenci. Dla każdego przypadku produkcji żywności i opakowań, konieczne jest przeprowadzenie szczegółowej analizy CF, w wyniku której można podejmować decyzje dotyczące jego redukcji. Badania naukowe powinny zidentyfikować emisyjność etapów jednostkowych (w zależności od warunków produkcji) oraz potwierdzić, że analiza CF odniesiona do opakowania wskaże obszary o najwyższym udziale. Wiele działań wpływa na końcowy ślad węglowy danego opakowanego produktu m.in. pozyskanie surowców, wytworzenie opakowania, transport opakowania, produkcja asortymentu opakowanego, dystrybucja.

The challenges of the food industry are to reduce Energy and material consumption and minimize environmental impact. The article presents issues concerning the carbon footprint of food packaging. Types of packaging, their impact on climate change and directions for reducing the environmental footprint are characterized. The legal requirements that manufacturers are obligated in terms of carbon footprint are also discussed. In every case of food and packaging production, a detailed analysis of CF is necessary and only then decisions can be made on its reduction. Research should identify the carbon footprint of unit steps (depending on production conditions) and confirm that a CF analysis related to packaging will identify the areas with the highest contribution. Many activities affect the final carbon footprint of a packaged product, including: raw materials obtaining, packaging production, transportation of the package, production of the packaged assortment, and distribution.
